I assume the server has a fixed IP address - so it can ping itself with that address also (and not just 127.0.0.1). Also you should be able to ping both the short and fully qualified name you specified in the hosts file.
Also - you should probably not specify 127.0.0.1 as the ip address for you hostname in the hostfile (localhost should of course point to 127.0.0.1, but server.acme.com should point to something else, i.e. the fixed IP address the server has).
